This delightful drink combines the zesty brightness of limoncello, the juicy sweetness of pear juice, and the herbaceous depth of rosemary simple syrup.
Topped with bubbly Prosecco and a splash of sparkling water, it’s a perfectly balanced blend of sweet, citrusy, and aromatic flavors.
Garnish with a sprig of rosemary and a slice of pear for a cocktail that’s as beautiful as it is delicious.
Ingredients:
- Your favorite Prosecco
- Limoncello
- Pear Juice (we juiced our own pears, but you can buy pear juice here)
- Rosemarry Simple Syrup (we made our own, detailed below, but you can also buy it here)
- Sparkling Water (we used Topo Chico)
- Pear and/or Rosemary (for garnish)
Rosemary Simple Syrup:
Ingredients (per 1 cup / 8 fl. oz.):- 1 cup water
- 1 cup sugar
- 1/4 cup fresh rosemary
- Combine the ingredients in a sauce pan
- Bring to a boil, stirring until the sugar dissolves
- Immediately turn off the heat
- Steep for 30 minutes
- Strain and store in an airtight container until ready to use
Perry Christmas Fizz
Mid-Sized Batch (4.5L) ~158 fl. oz. (26 x 6 fl. oz. fizz + ice and garnish)
- 3 x 750ml bottles of Prosecco
- 1 x 750ml bottle of Limoncello
- 26 fl. oz. (750ml) pear juice
- 1 1/2 cups (12 fl. oz.) rosemary simple syrup
- 12 fl. oz. sparkling water
Full Batch (9L) ~304 fl. oz. (50 x 6 fl. oz. fizz + ice and garnish)
- 6 x 750ml bottles of Prosecco
- 2 x 750ml bottle of Limoncello
- 52 fl. oz. (1.5L) pear juice
- 3 cups (24 fl. oz.) rosemary simple syrup
- 24 fl. oz. sparkling water
To make:
- Pour the quantities into your clean keg. Stir gently with a clean spoon to mix well.
- Place the lid on your keg, connect your CO₂ setting your regulator at 5 psi.
- Purge out the oxygen in your keg by lifting the release ring for 2-3 seconds (letting the CO₂ push out the air). Repeat 2 more times.
Consuming right away? Connect your tap and serve into a glass with ice and garnish with a slice of pear a sprig of rosemary.
Preparing in advance? Increase the pressure to 15 psi while storing to ensure the carbonation stays in your spritz, leaving it connected while it's being chilled. Always drop the pressure to 5 psi or lower while serving, otherwise it could shoot out with a vengeance!
