Elderflower 'Squash'

Instead of offering your guests a standard soda, try this elderflower-based 'squash' (a form of fruit juice punch). The combination of lemonade, pink grapefruit, and elderflower cordial has depth that is as equally good on ice as it is with your favorite spirit!

We've done the math (and the taste-testing) so that the ratios turn out pretty darn good when making large volumes, though feel free to tweak it - our feelings won't be hurt.

Ingredients:

Elderflower Squash

Medium (5.5L) ~186 fl. oz. (31 x 6 fl. oz. serves)

  • 1 x 500 ml bottle of elderflower cordial
  • 1 L of grapefruit juice
  • 1 L of lemonade
  • 3 L of sparkling mineral water

Large (~9.6L) ~325 fl. oz. (54 x 6 fl. oz. serves!)

  • 875 ml bottle of elderflower cordial
  • 1.75 L of grapefruit juice
  • 1.75 L of lemonade
  • 5.25 L of sparkling mineral water

To make:

  • Pour the quantities in your clean keg. Stir gently with a clean spoon to mix well.
  • Place the lid on your keg, connect your CO₂ setting your regulator at 5 psi.
  • Purge out the oxygen in your keg by lifting the release ring for 2-3 seconds (letting the CO₂ push out the air). Repeat 2 more times.

Consuming right away? Connect your tap and serve into a punch glass with ice. Garnish with mint or a fruit wedge.

Preparing in advance? Disconnect your CO₂ and store in a fridge or in your Keg Bag with ice until ready.

This is equally good as a mocktail as it is 'spiked' with your favorite gin or vodka - give it a try! Cheers!
