Ingredients:
- Your favorite reposado tequila (we used Don Sergio)
- Your favorite sweeter Italian apéritif liqueur (we used Aperol)
- Blue Agave Syrup (we used Herradura Agave Nectar)
- Lime juice - fresh squeezed, or do as we did and use Volcano Lime Burst Juice
Elevated Paper Plane Cocktail
Small (3.75L) Yields ~127 fl. oz. (~32 x 4 fl. oz. cocktails)
- 2 x 750ml bottles of reposado tequila
- 1 x 1L bottle of Italian apéritif liqueur
- 500ml blue agave syrup
- 750ml lime juice
Medium (7.5L) ~254 fl. oz. (~64 x 4 fl. oz. cocktails)
- 3 x 1L bottles of reposado tequila
- 2 x 1L bottles of Italian apéritif liqueur
- 1L blue agave syrup
- 1.5L lime juice
Large (9L) ~300 fl. oz. (75 x 4 fl. oz. cocktails)
- 1 x 1.75L + 2 x 1L bottles of reposado tequila (or equivalent combination)
- 1 x 1L + 2 x 750ml bottles of Italian apéritif liqueur
- 1.25L blue agave syrup
- 1.875L lime juice
To make:
- Pour the quantities in your clean keg. Stir gently with a clean spoon to mix well.
- Place the lid on your keg, connect your CO₂ setting your regulator at 2 psi.
- Purge out the oxygen in your keg by lifting the release ring for 2-3 seconds (letting the CO₂ push out the air). Repeat 2 more times.
Consuming right away? Connect your tap and serve into a salt or Tajín rimmed glass with ice and a dehydrated orange wheel for garnish.
- Rimming a glass: Sprinkle flaky salt or Tajín onto a plate. Rub lime around the rim of your glass, wetting it so that the salt will stick. Gently dip the rim into the salt / Tajín, wobbling it so that a light layer sticks to the rim.
Preparing in advance? Disconnect your CO₂ and relieve almost all the pressure in your keg. Store in a fridge or in your Keg Bag with ice until ready.
